Every time I disable "Use Central Processing Unit (CPU)" at the bottom and click "Update preferences", it's re-enabled. I only want GPU tasks.

That is not what this option defines (in every other BOINC project). It is used to represent purely CPU based tasks.

The uppermost "Use CPU" setting is the one you should set to "no". It overrides the lower one, which for some reason cannot be disabled.
Another option, is to disable those applications you do not wish to run. It's also possible to have different preferences for different venues, like "Home", "default" and so forth.

Why the lower CPU setting cannot be disabled, is not known to me. Maybe as Betting Slip said earlier, GPU tasks have to use some CPU cycles, so this setting is required. It just doesn't make much sense to have, if it cannot be disabled, I admit. I should read into it more, some day.
